Ham and Veggie Fried Rice

So easy and delicious, this recipe is one even your pickiest eater will love. P.S. This also makes a great lunch the next day!
Ingredients

2 cups diced Maple Leaf® Original Natural Smoked Ham

4 tsp (20 mL) vegetable oil, divided

1 onion, chopped

3 cloves garlic, minced

3 cups cooked rice or Ready Prepared Express Rice

2 cups frozen vegetables of your choice

2 eggs, lightly beaten

1 tsp sugar

2 tbsp (30 mL) soy sauce

1 tbsp (15 mL) fish sauce (optional)

Salt and pepper

Directions

Heat 2 tsp (10 mL) of oil in a large skillet or wok over medium-high. Add ham, onions and garlic.

Stir-fry for 2-3 minutes. Add rice and vegetables. Continue to stir-fry for 3-5 minutes more.

Heat remaining 2 tsp (10 mL) of oil in a small non-stick skillet.

Scramble the eggs until set. Add to the rice mixture along with sugar, soy sauce, and fish sauce if using.

Season to taste with salt and pepper.
